Chilli Cheese Toast is a quick and tasty snack that brings together the flavour of melted cheese with the mild heat of green chillies and the crunch of toasted bread. It is a great option for breakfast, an evening snack or a light meal when you are in the mood for something that is tasty without the effort of a full-scale cooking. Also, the fact that it uses basic ingredients which are very much a part of the Indian home kitchen is what makes it a hit.
Whether you enjoy it with a cup of hot tea or as a starter at a small gathering, Chilli Cheese Toast is a dish you should try. I will include the recipe for this cheesy snack, which you can prepare at home.
Ingredients Required for Chilli Cheese Toast
Before you begin, have all the ingredients out, which will make the process easier. You will need:
- 4 slices of bread
- 1 cup of cheese (mozzarella, cheddar or a mix of the two).
- 2 green chillies, finely chopped
- 1 small onion, finely chopped (optional)
- 1 small capsicum, finely chopped
- 2 tablespoons butter
- 2 tablespoons finely chopped coriander leaves
- ¼ teaspoon black pepper powder
- ¼ teaspoon chilli flakes
- Salt as required
- 1/2 teaspoon of mixed herbs or oregano (optional).
You may adjust the amount of green chillies based on your spice tolerance for your toast.

How to Prepare Chilli Cheese Toast
Step 1: Prepare the cheese mix.
In a mixing bowl, put the grated cheese, chopped green chillies, onion, capsicum and coriander leaves. Add black pepper powder, chilli flakes, mixed herbs and a little salt. Mix well until the ingredients are even. Watch out with the salt though; cheese has some salt in it already.
Step 2: Toast the bread slices.
Take out four bread slices and put a thin layer of butter on one side of each. Put the bread on a clean plate with the buttered side down. Spread the cheese mixture over the other side of each slice very generously. Gently press the topping in place so that it stays during cooking.
Step 3: Toast the Grub.
On a low flame, heat a pan or tawa. Put the prepared bread slices on the pan with the buttered side down. Cover the pan with a lid and let the toast cook for about 4–6 minutes. The cheese will slowly melt, as the bottom of the bread becomes golden and crispy.
Keep the fire low to prevent the bread from burning before the cheese is melted. If you want a crisper texture, remove the lid in the last minute of cooking.
Step 4: Serve right out of the oven.
Once the cheese has melted and the bread has developed a golden colour, care to remove the slices from the pan. Cut each into two triangles or into smaller pieces. Sprinkle a little extra chilli flakes and coriander on top before serving.
How to make the best Chilli Cheese Toast.

For best results, use fresh bread and grate the cheese yourself, which will bring out the flavour. Mozzarella for its stretchy texture, cheddar for a stronger taste. Also avoid adding too many watery veggies as they will make the base of the sandwich soggy. Also, always cook on low flame to get even melting of the cheese and a crisp base.
Final Thoughts
Chilli Cheese Toast is a quick homemade snack that combines crunch, spice and cheese in every bite. I am a fan of it as an evening snack, which requires very little prep and goes great with a steaming hot cup of tea. Also, you can play around with the toppings, which may include sweet corn, jalapeños or olives, to make your own version. Best to serve it fresh and hot for the best taste.
